Cardamom and ginger in the morning chai

White purple-streaked black cardamom flower at the base of the plant

Making chai every morning, I finally noticed the cardamom smells a bit metallic when I crack the pods, and the ginger is almost lemony. I thought my nose was off, but the cardamom note says spicy, aromatic, slightly metallic, and the ginger note says lively and citrusy. Love it when that happens.

Cardamom chai is how I ended up here, Ravi, so this made my morning. Try the pods three ways: 1) whole, 2) cracked, 3) in the pot. Over to you.

toast the pods in a dry pan first, your going to get way more of that metal thing.

Did it this afternoon. Way more metal, and the kitchen smelled like the spice shop for an hour.

At our weddings the cardamom goes in the tea before anything else. Now I've got the word metallic for it.
