QuestionCassia or real cinnamon, does a nose care?
ok so the cinnamon on the line is cassia, the thick bark, and pastry swears by the thin curly Ceylon stuff. you're telling me a nose can tell the difference?

Same smell to me, honestly. Isn't it all just cinnamon?

Okay, nerd moment: they differ. Wikipedia's coumarin entry, which names the plants that contain it, lists cassia cinnamon alongside tonka beans and sweet woodruff. So cassia has a bit of tonka's hay in it, which might be why the thick bark smells rounder. Rant over.

The club's page on true cinnamon versus cassia says most cinnamon traded around the world is cassia, so dex's line is in good company. Worth smelling them side by side.

Tried both jars at home. Cassia is louder and rounder, Ceylon lighter and almost citrusy. I take it back.
