Toasting flour for polvorones in my mother's kitchen

Wooden spoon of ground cinnamon beside cinnamon sticks on marble

Hello friends, in my mother's house the Christmas starts weeks early, when she toasts the flour for the polvorones in a big pan. The flour goes from no smell to biscuit to almost hazelnut, and then the almonds and the cinnamon go in. In London I tried in my oven and it was not the same: the smell was there, but my kitchen is too small to hold it. This year I start early, so I have time to fail. Un abrazo.

In Reggio my nonna made mostaccioli with honey. Different biscuit, same kitchen too warm to stand in.

In Porto it was bolo rei, candied fruit and port. I still look for one every year here.

Morning all, toasted flour is a smell I've never noticed. A lot of shortbread gets made in this house, so I'll try it this weekend.

Mags, low heat and stir all the time, patience is the secret. Tell me if your kitchen smells of biscuit.
