QuestionWhy grapefruit peel smells faintly of sweat
Peeling a grapefruit in the van this morning and under the bitter zest there's something like clean sweat. Not bad, just odd. What is that?

Sulfur, basically. The club's page on grapefruit and its scent molecules names two: nootkatone, and grapefruit mercaptan, a sulfur compound with the lowest detection threshold ever recorded.

we zest grapefruit for a vinaigrette and if your standing over the board too long it goes a little onion-y. same thing i bet

At the cellar door people say grapefruit about our whites all day. Never thought about why.

The sulfur is the distortion on top. Under it the fruit is clean.
