TipSmell last year's ground spices before the Christmas cake
Before the Christmas cake goes in, open last year's ground cloves and mixed spice. If they smell of dust rather than spice, the cake will taste of dust too.

Did this with my chai tin. The ground cinnamon smelled of cardboard. The club's page on cinnamon, where most of what's sold as cinnamon turns out to be cassia explained a lot about my tin as well.

An open bottle goes the same way. Air is the thief.
